Job Summary:

You will be responsible for the precise and efficient breakdown of pork carcasses and primal cuts into various retail and wholesale products, according to company specifications and USDA regulations. This role requires a strong understanding of meat anatomy, exceptional knife skills, and a commitment to maintaining the highest standards of hygiene and safety.

Responsibilities:

  • Perform all aspects of pork fabrication, including breaking down carcasses, boning, trimming, and portioning various pork cuts (e.g., loins, bellies, shoulders, hams, ribs, etc.).

  • Utilize hand tools, including knives, cleavers, and saws, with precision and safety.

  • Adhere strictly to all food safety (HACCP, USDA) and workplace safety (OSHA) regulations and company policies.

  • Inspect meat for quality, freshness, and adherence to specifications; identify and report any non-conforming product.

  • Maintain a clean and organized work area, including proper cleaning and sanitization of tools and equipment.

  • Work efficiently to meet production targets and deadlines while maintaining product quality.

  • Collaborate effectively with team members and supervisors.

  • Safely operate machinery such as saws, grinders, or other processing equipment as required (training provided).

  • Perform other duties as assigned by the supervisor.

Qualifications:

  • Experience:

    • Minimum of [e.g., 1-2 years] of experience in meat cutting, specifically with pork, in a production or processing environment is highly preferred.

    • Familiarity with various pork cuts and their preparation.

  • Skills:

    • Exceptional knife handling and sharpening skills.

    • Strong attention to detail and ability to work with precision.

    • Ability to work in a fast-paced, refrigerated environment for extended periods.

    • Good hand-eye coordination and manual dexterity.

    • Ability to follow verbal and written instructions.

    • Basic understanding of food safety and sanitation principles.

  • Physical Requirements:

    • Ability to stand for long periods of time (8+ hours).

    • Ability to lift, push, pull, and carry up to [e.g., 50-75] lbs. regularly.

    • Ability to perform repetitive tasks involving hands, wrists, and arms.

    • Comfortable working in cold, damp environments (temperatures typically between 30-40°F).

    • Must be able to wear personal protective equipment (PPE) including, but not limited to, cut-resistant gloves, steel-toed boots, hard hats, and aprons.

    • Ability to work independently and as part of a team.

Preferred Qualifications (Not Required, but a Plus):

  • High School Diploma or equivalent.

  • Bilingual in English and Spanish.

  • Experience with automated cutting machinery.
